Fresh Grouper Atop Simple Pasta with a Garlic Butter Drizzle

Who doesn’t love a classic Grouper sandwhich? Well, we want to add a NEW grouper recipe to your cookbook. Try your take at our fresh grouper over simple pasta with a garlic butter drizzle. Don’t be afraid to get creative with your pasta if you would like to spruce up your dish.

Various species of grouper can be found throughout Florida and the Bahamas. Gags, Reds and Black grouper are among the most popular. At the creation of this recipe Gag grouper season is beginning. Ingredients

  • .5 lb Grouper Fillets, Rinsed and Dried
  • 2 cups Halved Cherry Tomatoes
  • 1 Tbsp Minced Garlic
  • 1/2 Box Angel Hair Pasta
  • Olive Oil
  • Flour
  • Parmesan Cheese & Red Pepper Flakes, to taste
  • Salt & Pepper, to taste
  • Garlic Butter Sauce
  • 1 Cup Chicken Broth
  • .5 lb Sliced Butter
  • 2 Tbsp Finely Chopped Garlic

Directions

Prep: 10-15 min.|Cook: 30-40 min.|Yields: 2-3 Servings

  • Cut grouper fillets into large chunks. Season with salt & pepper and dust lightly with flour. Set Aside.
  • Fill a medium pot with water for your pasta, heat to boiling. Once boiling add your pasta and cook to your liking.
  • Pour some Olive Oil into a heavy pan and heat to medium-high. Once hot, drop your large grouper chunks in and let cook about 3-4 minutes on each side, or until fully cooked.
  • While your pasta and grouper are cooking, you can begin the garlic butter sauce. Bring the chicken broth and chopped garlic to a boil, then reduce heat and simmer until the broth has reduced by about half.
  • The broth reduction will take some time, now your fish should be fully cooked, remove the fish from the pan and add the cherry tomato halves, season to taste and let cook until slightly browned.
  • Your pasta should be cooked by now. Remove from heat, drain and toss with some oilive oil, set aside.
  • Now that your broth has been reduced by half, stir in the butter a few slices at a time until your desired thickness.

Plating Suggestions:

  • Place the oiled pasta on the plate first.
  • Top with the cooked & seasoned cherry tomato halves
  • Place a few grouper chunks atop the tomatoes.
  • Now, sprinkle the red pepper & parmesan cheese over the whole dish.
  • To finish, drizzle with your homemade garlic butter sauce!

Notes

If you try this and decide the pasta was a little too simple for you, you can dress it up alll you want. You can add some actual red or white sauces to it. Even through in some extra veggies like spinach, mushrooms or onions. Really, you can plat with the pasta as much as you want, simply just top your creation with your delicious grouper chunks and voila, you have a nice & easy meal ready for the family.
