King Mackerel produce good size white meat fillets. White meat means versatility in the seafood culinary world. Mild white fillets open the gate for a variety of seasoning and flavoring tactics. This specific kingfish recipe calls for an outdoor grill for that authentic grill flavor and to baste the king in garlic butter.

This recipe is a good starter recipe for someone looking to take a leap into the kitchen, or shall we say the back porch? 6 Simple ingredients and 2 simple cooking methods, makes for one delicious and fresh family meal.

INGREDIENTS

  • 4 King Mackerel Fillets (sking on)
  • 8 Garlic Cloves (smashed)
  • 6oz Salted Butter
  • 2-4 Limes (halved)
  • Salt (to taste)
  • Pepper (to taste)

DIRECTIONS

Prep: 15 – 20 min.|Cook: 10 – 15 min.|Yields: 2 – 4 Servings

  • Oil the grate of your grill with a grill brush or towel. Then preheat your grill to medium heat.
  • Back inside, add the butter and smashed garlic to a saucepan. Heat on the stove until butter is melted and the garlic has become aromatic.
  • While the butter is melting, rinse your fish and pat dry.
  • Once the king fillets are dry, make 3 deep cuts, along the width of the fish, on both sides. Now season each side of the fillets with a generous amount of salt and pepper.
  • Now, gather your prepared fillets and melted butter and bring the ingredients outside to your heated grill. (Tip: You should be able to place the saucepan directly onto your grill to keep the garlic butter warm)
  • Place the fish fillets skin side down onto your greased grill and coat with the warm garlic butter. Cook for 2-4 minutes.
  • Once cooked to your liking, remove the fish from the grill, immediately basting with more garlic butter.
  • Plate the cooked fish and squeeze the desired amount of lime juice over the fillets. Now dig in!

Notes

This garlic butter covered kingfish will pair nicely with our baked parmesan asparagus and rosemary roasted potatoes recipes. If those don’t put wind in your sails, you can try steamed broccoli and scalloped potatoes.

Alterations to this recipe can include a spice boost, different aromatics in the butter and even a different fish completely!
