Roasted Rosemary Potatoes

Potatoes go well with just about any dish, especially those containing meat. There is a reason the saying “meat and potatoes” is a popular reference for a “proper” meal. We are here to break up the monotony of mashed potatoes, house fries, home fries and french fries, with this deliciously herbed recipe.

Rosemary roasted potatoes are easy to make and liven up various meat lover dishes. These roasted potatoes are a great way to keep a light meal, light. They don’t involve a lot of oil and are roasted in the oven, so no deep frying. Try this recipe out if you are looking for a new spin on a favorite potato dish.


1.5 lbs of Small Red Or White Potatoes
3 Cloves of Minced Garlic (about 1 Tbsp of pre-minced garlic)
2 Tbsp minced fresh rosemary (may substitute dried rosemary)
1 oz Olive Oil (extra virgin olive oil if possible)
3/4 tsp salt (kosher or sea salt gives the best flavor)
1/2 tsp ground black pepper


Prep: 10 min
Cook: 1 hr
Yields: 4 Servings
Preheat oven to 400 degrees.
Quarter or half the potatoes and place them in a large mixing bowl.
In the bowl add the olive oil, salt, pepper, garlic and rosemary. Toss the potatoes to evenly coat them with the mixture.
Empty the coated potatoes on a sheet tray and evenly spread them in 1 layer. (If you want to make for easy cleanup you can line the tray with aluminum foil)
Place in the oven and roast them for 1 hr or until golden brown. Flip the potatoes once or twice during cooking to ensure even browning.
Remove the potatoes from the oven and add more seasonings to taste. Serve immediately.
